Can I enter the USA on the VWP in between F1 visa renewal?

I am an Australian citizen studying in the United States. I am currently in Australia.
- My F1 visa expired on June 25, 2018.
- It is currently June 30, 2018.
- My I20's end date is August 31, 2018.
- I am about to receive a new I20, which has an end date in August 2019.
After I get this I20 it will take me a few weeks to make an appointment for the visa interview with the US consulate in Australia.
However I want to go back to the US as soon as possible (in a few days) for the following reasons:
- Meet with friends, tourism activities.
- Meet with my research group to prepare for an upcoming workshop.
- I am also currently receiving a stipend from the university for TA/RA work during the summer. However I don't really need to be on campus (or in the country) to fulfill my duties.
- I am also currently registered for classes. It is a research degree so I don't need to be on campus. But it is preferable to be on campus.
My plan is to enter the US on the VW and then book an appointment ASAP with a US consulate in Canada to get my F1 visa. Then I will go to Canada and re-enter the USA with F1 status.
Is there anything wrong with this plan, or anything that I should be careful about when talking to the immigration officer? In particular, which of the bullet points above should I emphasize?
From these questions:
Can I visit the USA as (ESTA) tourist immediately prior to entry on non-tourist visa?
Can I enter the United States on Visa Waiver, go to Mexico and re-enter with F1?
It seems like my plan should work, but I want to make sure I'm not missing anything as it is a very long flight from Australia to the USA...

I would recommend that you don't. The credit and pay parts are fishy.
